Becasue human's body need fat for good health and energy. For this energy must need of fat.

Fat present in 3 categories.

1. Saturated: Which means highly or deep fried food which must shown a negative effect on health becasue it incereases blood cholesterol, which directly effect on our circulatory system.

But here 1g of satuated fat play a great role to realse energy by oxidation process.

2. As compare saturated fat it is less concentrated fat which converts into ATP by oxidation process.

3. In case polysaturated it is average many fatty acids chains are there. Which helps to provide energy to the whole during absence of glucose.

So overall human being need all three types of fat but in controlled manner. Thats why canola oil is best for health. as compared to others because rest of others have highr level of monosaturated & polysaturated fat concetration is present.
