For my Hospitality Management class I need to convert a recipe that service 4 to 6 people as the Yield to 84 serving as the portions.
Do I divide 84 by 4 or 6???
Serving size of the recipe I'm converting is 4 oz of meat, and 4 oz vegetables.
Im not sure the conversion to make the recipe of 4 to 6 feed 84 people? What am I supposed to convert the entire recipe by??
First thing if you know how to make for 4 to 6 people and you need to make for 84
So you must need to divide by 4 or 6
As when divide by 6 we have 14 so you have to make your recipe 14 times or the size(inside content) must be 14 times of the original which used to serve 4 to 6 people.
Now you must know that what type of recipe you are making
Like there are two type of recipe
1) Which are flexible with size from the starting or we can make make it with any size just by changing the raw material size and it will be done in one attempt.example-vegetables,fruit salad,rice
2) Those recipe which are not flexible with size So we can make these in just a fix size.So if we want to serve more people we need to make it again and again with the same process.So in this type of recipe we have to repeat our receipe till all people get served.
So if we have 84 people to serve and we can serve 6 at a time then we need to make the same receipe 14 times.
Like chapati,some pizza's
If these are the initial content 4oz of meat and 4oz of vegetables for 4 to 6
Then if it serve exactely 6 we have to take 56 oz of meat and 56 oz of vegetables but this is the maximum number of serving which may not occur. As if we take it serve 4 people then 21 times we need to take so 84 oz of meat and 84 oz of vegetables but in this case we may have too much left.
So according to this date we have to take 56 to 84 oz of both meat and vegetables i think best choice will be try it for 68 oz of meat and 68 oz of vegetables by assuming that initial serves exactely 5 people.
