The Digestion of Chicken Sandwich

The process of digestion is very important process that is associated with breakdown of large insoluble food molecules get broken down into small sized water soluble molecules which are effectively absorbed in to the plasma of blood. The process of digestion initiates at mouth and ends u into the anus/ rectum.

The chicken sandwich is composed of bread, chicken and butter which can be chemically classified as carbohydrates, proteins and lipids respectively.

Once the chicken sandwich enters the mouth, the digestive juices from saliva act upon it. The saliva essentially is composed of salivary amylase. The salivary amylase starts the process of hydrolysis of starch present in the bread of sandwich. This enzyme (amylase) initiates the breakdown of starch which is converted into oligosaccharides and monosaccharide’s that are more readily absorbed and utilized by the body. As soon as the sandwich enters inside the stomach, the acid present inside the stomach denatures amylase enzyme. As the food moves towards the small intestine, the pancreatic amylase which is bio synthesized by pancreas causes breakdown of starch into maltose. The food further moves into small intestine where glucosidase enzyme is present at the brush border of of small intestine. This enzyme converts oligosaccharides into monosaccharide.

The chicken present in the sandwich is mainly composed of proteins. Proteins are building blocks of the body. However, they need to get converted into amino-acids before getting absorbed into the blood stream. Stomach contains an enzyme-pepsin. Pepsin breaks the polypeptide bonds of proteins and converts them into peptides and amino-acids. In intestine, trypsin and chymotrypsin produced by pancreas. The proteins are broken into amino acids by enzymes exopeptidases and dipeptidases.

Butter present in chicken sandwich represents fats. The butter is digested and absorbed by getting broken down into small fat globules. The enzyme lipase present in intestine causes lipo lysis and converts fat into triglycerides. The bilirubin (bile salt) causes emulsification of fats and promotes its rapid lipolysis.
