Good Manufacturing Practices (GMPs) are the minimum sanitary and processing requirements for food companies.
GMPs are fairly broad and general and can be used to help guide the development of Standard Operating Procedures (SOPs).

Standard Operating Procedures (SOPs) can been defined as established or prescribed methods to be followed routinely for the performance of designated operations or in designated situations.
GMP standard operating procedures are very helpful and every establishment is encouraged to
have SOPs for every task or activity in the facility.

Advantages are:

• Are very concise and specific step-by-step instructions.
• Provide guidelines to help processors’ produce safe and wholesome products.
• Helps to maintain product integrity.
• Very useful in training employees
• These are the procedures which ensure proper endproduct characteristics (i.e., weights, physical
  characteristics, quantity, etc.)
• Helps in establishing a consistent method for conducting daily operations
• Prevents cross- contamination of products with raw materials.
• Addresses the cleaning/sanitizing the outer package surface to prevent post-processing contamination (i.e., inner cook bag, sanitizing dip of casing before removal, etc).
