In the case of Image Identification,It is done by AI algorithms which are trained based on several images which are available to these Tech Giants.These images for training is available to them by accessing the pictures which are uploaded to the internet with a certain tag name.They search each image based on the Tag name and give them as the input for the AI algorithms.

Email Classification can be done by monitoring each email which is registered and the user activity for that email.Particularly the user activity can be tracked by searching through the user reviews posted by such email users.

Mature content etc can be identified using image identification algorithms etc and through the digital content that are exposed in the internet using the tag name for those digital content.

Web crawlers are being used which is a special software that searches across the web pages that can filter out results based on certain regular expression.
