I hope you will rate my answer positively--

Pharmaceutical emulsions are thermodynamically unstable heterogeneous biphasic system.emulsions must contain a dispersed phase , dispersion medium, and an emulsifying agent.due to homogeneous mixture of two or more immiscible liquids , masks unpleasant taste or odour , increase absorption ,water washable ,and cost effective. These often occur physical and chemical instability due to creaming, cracking, phase inversion, flocculation, etc.to increase stability , effectiveness, and patients compliance few recent advancement are introduced -

Micro emulsion, multiple emulsion, non aqueous emulsion, liposome emulsions, emulsion polymerization, nano emulsions, self emulsifying drug delivery system, gellified emulsion, Pickering emulsions.

Here in multiple emulsion the immiscible oil phase seperate two miscible aqueous phase called as liquid membrane ,which act as barrier and also semi permeable membrane for the drugs which get entrapped in the aqueous phase, and can be used as environmental protection. remaining others are also used as bioavailability of formulation , work as solvent.

Thankyou.
