Explain briefly why surfactants can be used to make and stabilize emulsions. What properties do they have that make them useful to make and stabilize emulsions?
emulsion can be established by increasing the repulsion between the dispersed phase we can say that by increasing the electrostatic repulsion or steric repulsion. Emulsifiers R amplifier start reduce the interfacial tension between the two phases and contribute to stabilization of dispersed droplets with electrostatic of steric effect.
electrostatic stabilization is based on the mutual repulsion forces that are generated when electrical charge surface approach each other. In general electrostatic stabilisation is significant only for oil in water emulsion since the electric double layer thickness is much greater in water than in oil because electrostatic and steric forces can prevent aggression and hence stabilize emulsion.
