Explanation- carbohydrates are broken down using cellular respiration and fermentation process but fats are broken down by generally beta oxidation and the product acetyl-CoA is further oxidized via citric acid cycle which is the one of the process of cellular respiration. In fat catabolism fermentation does not occurs.

Explanation- Muscle cells do not have large amounts of stored ATP that is sufficient for excercise. So that during exercise muscle cells starts to make ATP and respiratory rate is elevated. Respiratory rate is elevated because muscle cell produces ATP by respiration process like Krebs cycle and electron transport chain. After stopping excercise, respiratory rate is still elevated to replenish muscle cells with ATP for next requirement of ATP. To make ATP fastly, again large oxygen supply is required for elevated respiratory rate.
