What does "food processing" do to the fats in food? Why are trans-fats considered the most detrimental to our health? Discuss the recommendations on trans-fat consumption, including some of the foods that may increase our risk of cardiovascular disease.
Food processing affects the fats in the food in the following ways:
Trans-fats are considered the most detrimental to our health because they increase low density lipoproteins i.e. LDL (bad cholesterol) levels and decrease the levels of high density lipoproteins i.e.HDL(good cholesterol) which increases the risk of heart disease,stroke and type 2 diabetes.
Trans fat are present in food items like doughnuts,cakes,cookies,frozen pizza,etc.Trans fat consumption should not be more than 2 grams per day.
