That depends on your size of business. Because according to GST ''e-commerce sellers/aggregators need not register if total sales is less than Rs. 20 lakh.''. In the first question, you asked about food delivery through the email invoice so, its cames under e-commerce sellers If your concern sales more then 20 lakh you should register GST.
If you registered under GST, definitely its mandatory to give the printed invoice to all the customers.
Can we use that invoice for our auditing purposes?

Any invoices that are signed by the customers, shoppers and even printed also allows auditing. But, the header of the invoice should contain organisation name and purchase/sales date.
