Rrason :- 1.Secondary structure of proteins is maintained by hydrogen bonds because secondary structure in terms of bonds is defined by the pattrern of hydrogen bonds between the amino hydrogen and carboxyl oxygen atoms in the peptide backbone.
Due to the regular folding of backbone of peptide chain two types of secondary structure arises which are:-
a) Alpha helix structure : In this a polypeptide chain forms all possible hydrogen bonds by twisting into a right handed screw (helix) with the -NH group of each amino acid residue hydrogen bonded to the >C=O of an adjacent turn of helix.
b) Beta pleated sheet structure :In this all peptide chain stretched out to nearly maximum extension and then laid side by side which are held together by intermolecular hydrogen bonds.
2.Tertiary structure:- It represents the overall folding of the polypeptide chains by further folding secondary structure.Actually this structure is formed primarily due to interactions between the R groups of amino acids that make up the protein.R group interactions that contribute to the tertiary structure include hydrogen bonding,ionic bonding,dipole-dipole interactions,etc.
Hydrophobic interactions are also important in which amino acid with non polar,hydrophobic R groups cluster together on the inside of the protein,leaving hydrophilic amino acids on the outside to interact with the surrounding water molecules.
Bonding of tertiary structure gives two molecular shapes to tertiary structure:
a)Globular structure
b)Fibrous structure.
