The small intestine maximize the digestion and absorption process. The majority of carbohydrate digestion takes place in the small intestine. Disaccharides like sucrose, maltose, and lactose are broken down into monosaccharides, which are then absorbed straight into the cells that form the intestinal lining. Starches also get digested in the small intestine because the pancreas secretes amylase enzymes into the small intestine to breakdown of certain starches.

Protein digestion also begins in the small intestine with the aid of pancreatic juices that break down proteins and peptides down into amino acid chains. Though the acids of the stomach also help untie some of the protein strands, the enzymatic processes defined above can only take place in the small intestine.

The small intestine also contains some complex nutrients, such as fibre and resistant starch, and a small amount of other food molecules that have escaped the digestion process. So about 3-5% of ingested protein normally escapes digestion and flow to the large intestine.
