Have you ever thought which country you would choose only basing this decision on its food? Pedro can't make his mind up. He loves so many different types of cuisine! Pizza is italiana, fajitas mexicanas, sushi japonés, paella española, croissants are franceses, the best chocolate is belga… Food, glorious food!
What do the words in italics have in common? As you probably noticed, all of them refer to nationalities or places of origin. Grammatically, they are adjectives because they describe or modify the words they accompany. In Spanish, we call these words gentilicios.
Moreover, whereas in English the adjective remains invariable, in Spanish, adjectives must agree in both number and gender with the nouns they modify. Therefore, we would say chorizo español but tapas españolas.
Another difference we should bear in mind is that these adjectives are always typed in small letter, never capitalized.
