Here I would like to clear what is the galley means first, "The Galley" in the restaurant which prepare their foods in one common place and distribute the same to their all units from the place.

First I would like to start from positivity,

There is so many positive statement are available.

1. We can prepare the required items for all the places together in one particular place, so it can reduce the cost of infrastructure.

2. Another main thing is we can prepare the required items with same level of taste, so that it will have some common attention to the customers.

3. It will decrease the labor cost mainly. Of course, it is also another important cost reduction in the business.

So these are some common positive statement about "The Galley"

Secondly we shall go with weakness and threats.

Yes, in every business there will be some weakness and threats for sure. We don't want to be with fear of the same. We required knowing how to tackle the same.

As of my knowledge in "The Galley", main weakness is we cannot provide any sudden requirement of customer in the restaurant. We can provide what we currently had, this will be the main weakness here.

The threats!!!

Yes of course there is a threat for this business.

While caring the foods from the main place to distributors place, we can assume whatever can be happened in the middle before the food reaches to the junctions. It can be happened naturally or it may be done behalf of business enemies.

As my knowledge in change management theory, I would like to suggest Jean Porter here is try to build some organized kitchen at least for urgent requirements in the restaurant. So it will improve the satisfaction of the customers and try to test incoming items at least once so that the threat will be reduced here.
