1)Lipids are broken down into fatty acids and
monoglycerides.Lipid digestion starts in the mouth and continues on
in stomach and small intestine.
Acid lipase start the digestion where lingual lipase in mouth and
gastric lipase in stomach
The optimum pH for lingual and gastric lipase is pH 4-6.
Lipase secreted from pancreatic juice.
Bile salts are cholesterol derivative that helps emulsify lipids to
assist digestion.Lipase converts triglycerides into fatty acids and
monoglycerides.
2)Amylase acts upon the digestion of carbohydrates. As the bolus
of food is pushed along the digestive tract through peristalsis pH
changes.
They are active at pH of 6-7.
This enzyme hydrolyses starch to maltose.
3)Pepsin is an enzyme in the stomach that helps breakdown of
proteins into peptides. Active pepsin has lower pH of 2 ,soo it is
best for pepsin to stay acidic.
Proteins are broken down into amino acids. Pepsin is secreted by
chief cells of gastric glands.
