why is egg white is used as an antidote for heavy metal poisoning
Egg white consists mostly of proteins that have sulfhydryl (-SH)
groups in their structures. These groups can bind to heavy metal
ions (such as Pb2+, Hg2+, etc.).
This same reaction with proteins and other molecules containing -SH
groups in the body is one way by which these ions are toxic.
Heavy metals such as Lead, Mercury cause the enzyme unable to bind its normal substrate by either changing the proteins structure so the substrate cannot bind or blocking the active site itself. Egg white is loaded with proteins that the lead or mercury will bind with them in the stomach and then get pumped out taking the lead or mercury with them. In addition, the eggs can be ‘administered’ immediately to prevent further damage.
