What steps are taken by the pig in digesting lipids to allow hydrophobic lipids to be digested in the aqueous luminal environment?
The digestion of lipid by the pig includes following steps -
1.Lipid or fat diestion initiates with the emulsification by bile salts .Due to insolubility of lipid, lipid droplets accumulates into big fat globule in the small intestine. In pig, the specific lysolecithins paly a role in oil in water emulsion and forms the small lipid droplets from the large lipid droplets by emulsification.
2.Therefore, the contact surface of fat will be more exposed because of reduced size of fat globules due to lysolecithin action. Lipase action can hydrolyse more fat due to more fat molecule exposed to lipase.
3.After completion of hydrolysis,Micelles mixing with fatty acid ; monoglycerides,bile phospholipid and salt will be formed. These formed micelles now faciliates the transport of hydrophilic lipid in aqueous luminal environment of intestine and enters into enterocytes and improves the lipid absorption in pig.
