Generally 20-30 degrees centigrade is the optimum temperature for fermentation of yeast.

2. Oxygen

presence of excess oxygen during the yeast fermentation leads to the production of acetic acid which is undesirable. So they maintain sufficient oxygen neither less nor more.

3. Water

The water requirement of yeast is less than bacteria and more than moulds. Approximate water activity requirement is 0.85.
