When salicylic acid is dissolved in water, it produces a salicylate dianion, which reacts with an acidic solution of Fe(III)(NO3)3, to produce a highly colored (violet) tetraaquosalicylatroiron(III) complex.
The appearance of violet color is measured quantitatively to determine the amount of salicylic acid present in the solution. The more the violet the solution is, the more salicylate present.
