2ANS: Beets contain the pigment betacyanin in vacuoles within the cell. Any disruption of the membrane due to stress will allow the betacyanin to leak out of the cell coloring the surrounding solution. .So the pigment betacyanin the membrane of beets are colored red .when more damge of the membrane due to stress  ,color of the beets is off.now we put the beet in the solvent  for testing .when we provide heat to beet memeberane stree will be there on the membrane.Stress process of the membrane will be seen very easily by naked eye.

Here is a solvent of Acetone in which we put it.Actone has greater affinity to dislove the Lipids then methanol solvent . So the Acetone Solvent cause more stress on Membrane . So the stress Membrane can easily seen by naked eye and its easy for studing cellualar Membrane .

3ANS :Phospholipids is the class of lipids and the major component of cell membrane .lipid bylaye natutre of phospholipids is amphiphilic in nature .The Nature of Bilayer phospholipid membrane provides hydrophilic and hydrophobic region. When in aqueous solutions, phospholipids are driven by hydrophobic nature interactions that result in the fatty acid tails to minimize interactions with water molecules. These specific properties allow phospholipids to play an important role in the phospholipid bilayer.

Phospholipids has Tendency to self assemble to minimizes the energy ,cell expands on membrane construction.Becuase .one side of the molecule is hydrophillic (likes water), the other side is hydrophobic (hates water). The hydrophobic ends of all cluster together, giving the bilayer structure, the hydrophillic ends are exposed to water, allow the structure to stable in water. Biologically Its Important because these bilayers are make cellular membranes. .totally depends on Hydrophillic in nature of phopholipid bilayer that helps in self assemble to make memebrane .
