Avocado Oil- is obtained from the fruit of Avocado plant which is also called Persea americana found in the region of Central America, in warm and subtropical climates. Contains several bioactive compounds such as polyphenols, tocopherols, as well as phytosterols also increases absorption of carotenoids.
Avocado oil is obtained after pressing the fresh pulp of fruit, have high monounsaturated fatty acid content, butter or mushroom flavour, and are green in colour due to presence of high amount of carotenoids as well as chlorophylls. Oil also have Vitamin E and beta-Sitosterol low acidic, and high smoke point due to which frequently used in baking, roasting, and sauteing.
