Refrigerant is the liquid which is used in heat engine or refrigerator cycle which takes the heat from the cycle or give it and changes it phase. Superheat term is used when any component or liquid is above it's saturation temperature. So when refrigerant which is used is in superheated condition then this evaporator superheat which tells about the difference in temperature is used. It tell about the degree at which refrigerant is superheated. There is a level for this parameter which is helpful for technician. If a compound or refrigerant is used whose saturation temperature is 110 degree Celsius and if it is now in 140 degree Celsius the evaporate superheat is 30 degree Celsius. If this temperature is more than permitted level then it means that refrigerant is taking more amount of heat than expected that means the flow of refrigerant is more as heat flow is also dependent on mass flow similarly we can say that if this is less than expected than flow rate of refrigerant is less.
