If ice cream is not churned enough, larger ice crystals can develop, causing the ice cream to become too hard. Without churning icy texture will form. Less air in the ice cream due to no churning makes it harder.

Procedure


Blending

Blend milk, with stabilizers, and emulsifiers.

Pasteurize mix

Pasteurize the mix at 155 F for 30 minutes.

Homogenization

Mix then homogenize to decrease milk fat globule size to form a better emulsion and contribute to smoother creamer icecream

Age it for cooling before freezing

Add liquid flavors and colors and mix well

Freeze

Freeze mix and incorporate air. use either batch or continues freezer,

Add fruit nuts and bulky flavorings finally.

Pack it well.
