Suggest a risk assessment model for enzymes to be used for food purposes.
A Risk Assessment Model is a combined effect of identifying and analyzing potential events which may negatively impact individuals (or) environment( risk analysis) & making judgements on risk tolerance based on the analysis. Thus, it is a part of Risk Management Strategy which helps in elimination of potential risks.
#The basic Risk Assessment Model involves the following steps:
1. Identification of Hazards,
2. Desire which might be harmed, to what effect and how & evolution of risks by Dose- response assessment where dose & response is investigated; Exposure assessment where magnitude of exposure with different product uses investigated,
3. Desire on precautions & record your findings by data gathering,
4. Risk Characterisation and
5. Risk Management.
The risk assessment process for enzymes follows the general approach but Benchmark doses are used to define effect and no-effect thresholds instead of Classic dose responses.
NOTE: The risk assessment of the enzymes shall be conducted comprehensively based on safety evaluation of source organisms, degradability in gastrointestinal tract, toxicity data and the estimated daily intake of the target enzyme.
Examples- Pectinase risk assessment, Diastase risk assessment etc..
#Risk assessment model can be quantitative (or) qualitative in which qualitative is useful in industries. Site- specific risk assessment model is also developed which is adopted to specific site.
