Pulses are legumes that are found in pods. They are a high source of protein as compared to cereal grains which are a high source of carbohydrate. Pulses have the ability to fix nitrogen and are thus used in crop rotation unlike cereals. Pulses utilise lesser amount of water than cereals.

Pulses are a rich source of protein across the world. Pulses contain twice the amount of protein than whole grain cereals. It also contains resistant starch, a type of carbohydrate that acts like fibre in the body. Proteins are rich in both rich in soluble and insoluble fibre. They also contain important vitamins and minerals like iron, potassium and folate.
3) Comparing white bread and baked beans, what is the major nutritional difference?
White bread is made from refined flour from cereal grain and is a source of carbohydrate whereas baked beans are pulses and are rich in protein and fibre.
