you notice that the probability Pab(t) of finding a particle
between a<x<b at time t (gaussian wave packet function)
changes with time. does this mean that the particle
self-destructs?
First thing if region is all space , that is our system has boundary at a and b, then the probability of finding the particle on all region would be 1 and it will not change with time, because it means particle is in the region. And if is not equal to one then we are not sure that our particle is in the region or not. Now taking a part of our system, suppose we have system with boundary at 0 an L and we are finding the probabilty of particle in small portion of it, then if probability of finding particle changes with time it means our particle is in motion and it can be anywhere in between 0 and L. In this case the changing of probability with time does not mean particle self destructs because it can be anywhere in region and at a specific place its porbability of finding is changing. If particle self destructs in that case then scenerio would be totally changed as conservation laws will work and quantum transition equations will be used like case of particle physics.
