Pork must be adequately cooked to eliminate disease-causing parasites and bacteria that may be present. Humans may contract trichinosis (caused by the parasite, Trichinella spiralis) by eating undercooked pork, even though progress has been made in reducing trichinosis in grain-fed hogs. Human cases have greatly declined since 1950. You will want to cook pork to an internal temperature of 145 °F as measured with a food thermometer and allow meat to rest for at least three minutes before serving.

Explain this and do you have any special ways of cooking that help you avoid cross contamination of foods or food surfaces ?

Expert Solution

Trichinosis is spread by eating raw or undercooked pork because when the temperature is not enough, the larvae of the parasitic worm stays as it is. These spread through larva eand ingestion of large and cannot spread from one human to another unless there is ingestion of larvae is done. These larvae would be ingested as well as released from the encysted cysts by the actions of the stomach acids, thus developing into the adult male worms as well as female worms. These penetrate in the GI tract and would be reaching the lymph drainage system. These larvae then get distributed throughout the immune system of the host.

When this meat is heated overhigh temperatures, the liveable cysts are destroyed, and thus if the meat is consumed, there would not be spread of infection.

Special methods of cooking only includes proper hygiene with running water wash of meat followed by cooking under high flames, to avoid any sort of undercooking.
