a. Why exclude panelists with chronic dry mouth in the evaluation of lemonade?
b. Why exclude someone with a cold in the evaluation of an aromatic white wine?
c. Why exclude someone with dentition problems in the evaluation of potato chips?
d. Why exclude PROP non-tasters in the evaluation of sharp cheddar cheese?
a) xerostomia is a condition in which a person have a sensation of dry mouth with decreased salivary flow . The acid which is present in lemonade helps in stimulation of salivation, which makes a person feel hydrated as it helps in stimulation of saliva. and when a person having the above problem , it will not give the actual response , so we should avoid that person.
b) aromatic white wines are the wines with a strong aroma as they contain terpenes and in cold senses of smell damage and thus ability to perceive a flavour also damage as there is an inflammation in the nose which results in swelling and obstruction.
c) A person with a dentition problems already have a dental problems or plaque formation in their teen and on eating potato chips this will exaggerate as Potato chips are rich in starch which gets converted to sugar which traps between the teeth and causes the plaque so these type of persons should be excluded
d)PROP non tasters these are the persons who rated caffeine as very bitter and they have less taste perception ability and bitter flavour is usually found in Cheddar cheese and because of this it makes it unpalatable and persons belongs to this category will not help in evaluation of is bitterness and quality parameters.
