List the fruit peels other than orange having esterase enzyme and compare them based on the quantity of the enzyme.
Esterase is the enzyme present in the pectin containing fruits. It is present in the form of pectinesterase. It is present in orange, lemon ,guava ,mango ,tomato, apricots ,strawberry and some vegetables. Esterase hydrolyses pectin to alcohol and polygalacturonic acid and which is further hydrolysed by enzyme polygalacturonase into monogalacturonic acid .Alterations in the degree of polymerization and pectin esterification soften's the texture of fruits during ripening .In tomato it decreases the viscosity whereas in orange and lemon it helps in cloud loss and separation of the juices into two phases : a transparent liquid and another containing the precipitate of solids calcium pectate complex,basically it helps in maturity and ripening of fruits.
