Lean methodology is the mechanism employed at the workplace to
reduce waste, which in turn, increases company’s profitability. The
following steps of Lean Methodology can be employed in pizza
restaurant to improve its efficiency:
- Keep the ovens at the far end of the kitchen, against a wall
having window. This facilitates airflow as well as heat management
of the kitchen. This also facilitates movement in the kitchen.
- Incorporate supply chain mechanism starting with preparing the
dough, rolling the base, adding toppings, cooking in oven,
packaging and ready for delivery/service. This sequential flow
facilitates performance and eliminates errors, which may turn to
become waste.
- Maintaining shelves for toppings with clear nametags, so that
no error happens while adding the toppings.
- Using standard measuring vessels to use the raw ingredients.
This helps in standardization as well as waste reduction.
All these measures will facilitate
flow in the restaurant kitchen and helps in reduction of waste and
errors.
