A) low calorie vegetarian diet Egypt includes dishes mostaly made up of chickpics, fava beans , various lentils, vegetables, olive oil, various plant etc. All these diet ingredients are rich source of carbohydrates, protein, fat, minerals and vitamins. Some of the food variety are mentioned below-

Tamaya/falafel: deep-fried ball made of ground chickpeas, and fava beans.

Lentil soup: it is vegetarian soup based on lentils.

Baba Ganoush: it is made of eggplant mixed with Tahina, olive oil and various seasonings.

Nutritional value of food is the measure of a well-balanced ratio of essential nutrients protein, fst, carbohydrates, minerals, and vitamins in items of food or diet in relation to the nutrient requirements of their consumer. Althoufh Egypt vegetarian diet is low calorie but it is rich in protein , carbohydrates , minerals, vitamins and fat. So it's a complet diet , contains all the essential part of balance diet in optimum amount . That is why Egypt people do not suffer from any deficiency disease.

B) Fishes are good source of marine lipids. Since traditional Japanese consume increase quantity of fishes, but found that surprisingly few of these suffer from heart and circulatory disease. If is due to that most predominantly unsaturated fatty acid in fish food is 5,8,11,14,17 eicosapentaenoic acid ( EPA) . This EPA is a precursor of leukotriene 5 ( LT 5) series , which are much in activity than leukotriene 4 series. These Leukotriene mainly leuko84 ( LT 4) involved in anaphylaxis reaction, involve in inflammation, allergy , and in heart attack. So because marine liouds produce LT 5 seriese, which are less potent in their action. So these people are less prone to all these disease . Apart of this EPA inhibits formation of thromboxanes , which promote platelets aggregation and thrombosis. while European diet contains fat rich in arachidonic acid which leads to synthesis of LT4 series , thus these people are more prone to heart and circulatory disease.
