Is there any existing detergent without mannanase? If so which one and how does it manage to work without it?
Mannanase are group of enzymes that breaks down the complex mannan into simple oligosachharide. Thus Mannanase are used in laundry detergent because it flushes off stains in fabric.

Working of non enzymatic detergents -
Non enzymatic detergents have alkali bases in them which cause reaction with acids present on the fabric causing easy removal of stains. They also have surfactants and anti redepositing agents that reduces the surface tension causing breaking up of stains and removal of dirt. Bleaching agents are also added to facilitate removal of toughest stains.
