DNS is used to study the enzymatic activity of amylase, which breaks starch into maltose. Higher amylase activity produces more amount of maltose, which reduces 3, 5-dinitrosalicylic acid (DNS), which is yellow in color, to 3-amino, 5-nitrosalicylic acid (commonly termed "reduced DNS"), which may be orange, brown or red depending on the concentration of maltose.
