Ans18. . Certain microbes associated with food can also be harmful we refered to these as foodborne pathogens .there are various factors which are responsible for food spoilage such as bacteria , mould ,yeast , moisture , light , temperature ,and chemical reaction.
Microorganism grow on the food materials and multiply . They release toxins in the food and making them unfit for consumption . They breakdown the food molecules into amines and change the taste , texture and external appearance of food.
21. Juice processing requires number of unit operations that increase the chance of contamination and the cost of production . Further, due to the presence of high amount of water and sugar , fruit juice are prone to spoilage by yeast , mould and bacteria .
Eg. Species of fungal genus colletotrichum cause crown rot in bananas . Yeasts promote fermentation in fruit by breaking down sugars into alcohol and carbondioxide .
22. Foodborne viruses are derived from the human gastrointestinal tract , and their presence of food and wanter is a result of contamination . Viral disease are associated mainly with bivalves because they feed by filtering large amount of water , which causes the viruses to concentrate when the harvesting water is contaminated . Though a number of viral group have been detected in bivalves , clear epidemiological link with seafood exist only for norovirus and hepatitis A virus .
The survival of incoming infectious virus in stomach acids, bile and proteolytic enzyme in the gastrointestinal tract all contributes it's pathogenicity . Proteases convert non infectious rotavirus to infectious subvirion particles.
