Crystallization is the process which uses the law that solubility of a salt in water decreases as the temperature decreases. Hence when we cool the solution the salt molecules starts precipitating and thereby forming crystals. Now if we cool the solution slowly then the there will be adequate time for the rejection of unwanted molecules often called as impurities to separate out and pure sal molecules will come together forming a crystal. In such a way as there are less impurities pressent in the lattice of crystal the size of crystal obtained will be larger. On the other hand if you coll the hot solution too quickly then there won't be sufficient time for the impurities to settle and hence will be trapped in the crystal lattice. Due to this crystal will have irregular and deformed shape, which will lead to the smaller crystal size. Hence it is not advised rapidly cool the hot solution.
