Is there a difference in texture, rigidity, or water content between yellow, orange and purple carrots? How would the type of carrot impact the osmosis rate?
ANSWER : No there is difference in texture, rigidity, or water content between yellow, orange and purple carrot. Yellow and orange carrots are eastern carrot variety while purple carrot is western carrot variety. Yellow carrot have a firm, crunchy texture. The purple carrot range in colour from dark violet to reddish purple, with an orange or yellow core. When comparing these three : Orange carrots - Highest in beta-carotene, contain smaller amounts of alpha-carotene, gama-carotene, lutein, zeaxanthin. Yellow carrots - Highest in lutein, may also contain zeaxanthin, Purple carrots - Highest in anthocyanins, also contain beta-carotene and alpha-carotene and small amounts of lutein and zeaxanthin.
The water inside the carrots contains all the sugars, salts, protiens, and DNA of the carrots. Pure water is hypotonic, if the solution is more salty than the carrots, the carrot will become squishy and may shrink.
