In the Kingdom of Saudi Arabia there are so many food products are manufactured and marketed, these food products are made with certain standards and quality. The food Technical regulation and standards are maintained in manufacturing food products to promote the quality of the foods and its expiry. The foods that are made under this technical regulations are;

• Pickled cucumber, pickled fruits and vegetables, hot sauce, fish oils, canned fruits cocktails,
  wheat flour, pasteurized milk, frozen chicken, custard powder and so many things..,

Technical Regulation and Standards;

The Fish oil is made by several processes such as,

1. Repeated heating under high temperature,
2. Alkali or acid treatment
3. Water removal repeatedly,

By this way the refined fish oil is extracted and used it undergoes some processing steps such as,

• solvent extraction
• saponification
• re- esterification
• trans- esterification.

In this way fish oil is made, the fish oil constituted with glycerides of fatty acid and ethyl ester. These are the food technical standards used in fish oil.

The food additives used in the fish oils are;

• ascorbic acid,
• ascorbyl esters and
• tocopherols.

the emulsifiers used in this oil are lecithin and fatty acids. these food additive may cause certain health issues
