Q1 Brining a Chicken
Q1 A .One very delicious way of making fried chicken is to brine the chicken before frying. This involves submerging the chicken in salt water (brine) for a period of up to 24 hours. This is also a great way of getting other flavors into the chicken as the molecules diffuse in.
If you have a 3 lb chicken (1 kg = 2.2 lb), how far does the brine have to travel to reach the center of the chicken? Assume the chicken has the same density as water (1 g/ cm3) and approximate the chicken as a sphere, Vsphere=43πr3.
What is the distance to the center of the chicken? Give your answer in cm but do not include the unit:
Correct Answer is 6.88
Q1B. Say you leave the chicken in the brine for 24 hours. The diffusion constant for salt is Dsalt = 2⋅10-5 cm 2/sec and assume the chicken is 100% water.
How far into the chicken will the salt diffuse in that time? Give your answer in cm but do not include the units:
Correct Answer:___________________
Q1 C. Will the brine solution reach the center of the chicken?
Correct Answer : YES
Q1A. Distance to the center of chicken 6.88
Q1B. The brine will diffuse a distance 3.22 into the chicken in 24 hours.
Q1C. The brine will not reach the center of the chicken as x= 3.22 and distance to the center is 6.88
Note-I didn't find any mistake in mycalculation. So, as per my calculation, the brine solution will not reach the center of the chicken.
