Can anyone come up with 10 interesting ideas for senior project / capstone for an Information Technology major? I can't think of anything interesting.

I'm presuming you are talking about your capstone project. My advice to you would be to select a topic similar to your interests in IT, preferably similar to what you would like to do in terms of a career. Many capstone courses have some preselected topics on which students can work. If yours does not, you can always speak with a professor about a project that pertains to your interests.

A few examples of projects on which students at my university have worked include a cybersecurity application which allows students interested in security to practice on various security vulnerabilities, a card reader which pulls student information from their university ID upon scanning and processes that information into a database (this was for registering students at the student IT organization), and a virtual network which allowed students to run various virtual machines from a Java applet.
