Because of the structure of water, it is a polar molecule. That means that the hydrogen atoms have a slightly positive charge, and the oxygen atom has a slightly negative charge.
Ionic compounds are crystals with equal numbers of positive and negative ions. When these ionic compounds are put in water the water molecules start to attract the ions, separating them from each other. The hydrogen atoms of the water molecules are closest to the negative ions of the compound, and the oxygen atoms of the water are closest to the positive ions of the ionic compound.
Picture each of the ions of the ionic compound being surrounded by water molecules and that will give you an idea of what is happening, but at a very fast rate once the compound is added to water.
This is just a physical change since if the water is removed the ionic compound is recovered unchanged.
