Rank the sweetness of 0.0375% sucralose, 7.5% glucose, 7.5% xylitol, 7.5% frucose, 10% sucrose and 7.5% sucrose, comment on the differences in sweetness and explain the difference.

Solutions

Expert Solution

1. Sucralose is an artificial sweetener which is about 320 to 1,000 times sweeter than sucrose and also sucralose is much sweeter than fructose. Fructoseis about 1.2 times sweeter than ordinary sugar. In contrast, sucralose is about 600 times as sweet as sugar.

2. Fructose, or fruit sugar, is a simple ketonic monosaccharide found in many plants. Fructose is sweeter then glucose and sucrose because glucose and fructose are found from disccharide sucrose. But fructose and glucose are sweet in tase. But as compair glucose and fructose fructose is more sweet because of its structure fructose having inverse structure which make fructose more sweet. And comperison between fructose and sucrose, fructose is more sweeter.

3. Xylitol having approx. same sweetness as that of sucrose and higher then that of glucose.

Sweetness according to decreasing order

0.0375% Sucralose > 7.5% frucose > 10% sucrose > 7.5% sucrose > 7.5% xylitol > 7.5% glucose
