The Karmichael estate currently has significant fruit blocks within its boundaries, but have traditional been sold to a local dried fruit producer rather than used for other purposes. Darien, Alby and Grace’s nephew, has been experimenting with cider blends including the traditional apple and pear, but also stone fruits which grow abundantly on the property. Alby and Grace are looking into options for an expansion into the cider ranges, led by Darien, called “Cider Man”.

1. Information needed to assist in decison making is Type of Fruits for producing the best cider

In making the decision for this scenario adequate acquisition of Raw materials is the foremost requirement. Apples and pear are primary raw materials required for making cider. The quality of final cider depends on the quality of the fruits used to produce the cider. To produce the best cider, these apples and pear must be juicy, sweet, well ripened and should have adequate levels of natural acids. There are various types of apples that can give cider all together different characteristics. There are four different types of apple juices:-

Aromatic

Astringent

Acid-Tart

Neutral Tasting

There can be different combinations and mixtures of these juices which can give different flavours to cider. Beyond apple blending, some cider producers may also improve flavor by adding tannic, malic, and other natural acids. Tannins add a slight bitter taste and astringency to cider. Malic, citric, and tartaric acid give a zesty tingle. They also help to inhibit microbial contamination. In order to make one gallon of ciber approximately 6-6.5kg of apples depending upon the juiciness of the apples.

As per the information gathered Alby, Grace and Darien should explore the development of Cider man because of following reasons:-

1. They have there own property to grow fruits which will reduce the cost of producing cider. Because purchasing best quality apples and pears from outside will be much more costlier.

2. They can modify the varient of fruits as per their requirements and required quality of cider.

3. The Future- Current data suggest that cider production will show significant growth in the near future. This will be a result of the expected continuing movement toward more natural products. Refinements in the manufacturing process should also be expected. This would include more efficient methods for harvesting and sorting apples and improved presses, which will squeeze even more juice out of the pomace. Manufacturers will also develop more useful yeast cultures, which will produce better tasting cider with increased alcohol content.

Conclusion- This would be great idea to continue with this idea of Cider Man.
