A)chocolate chip cookie recipe calls for baking soda (NaHCO3).The basic propertie of baking soda mix with acidic properties of acetic acid present in brown sugar which is added to prepare chocolate chip cake and starts to neutralise creating air bubbles (CO2) This raises the baked good and also makes it more tender
.The recipe contains acitic acid
The recipe can be modified by adding baking powder twice the quantity of baking soda
Baking powder contains 1/4 th of baking soda,1/2 th cream of tartar and 1/4th of corn starch
B)The baking powder on its own is used in baked goods that doesnot already contain an acid. baking powder it self contains acid (cream of tartar)if you where determined to do with baking powder then you could triple the amount of baking powder.due to this you will notice a bitter flavour.some banana cakes are made with baking powder on the choice of people.
