Chicken breast muscles are used for flying extremely short distances, usually to escape perceived danger. So these muscles are composed of fast twitch fibers and they derive energy mostly from anaerobic glycolysis, hence they are called fast anaerobic fibers and constitutes white meat, whereas chicken legs are used for standing and walking, so these muscles are composed of slow twitch fibers and they derive energy by means of aerobic glycolysis as they are used for slow and steady movements. So, they are composed of slow oxidative and fast aerobic fibers which constitutes dark meat.
