Since the alleles of two genes assort independently means that the assortment of genes of one pair doesn't depend upon the other gene pair during the process of gametogenesis. This results in production of offspring with new combination of characters.

BbTt will produce 4 different type of gametes having one allele of each of the gene(gametes are haploid) so the different gametes possible are BT, Bt, bt, bT. Because there is equal probability( 1/2)that the gamete will recieve one allele of one gene(coat color) and another allele of the second gene(tail) By multiplication rule (1/2 for blue/pink * 1/2 for long tail or short tail) = 1/4 frequency of each type of gamete.
