Hemoglobin consist of 2 subunits, a and b differing in length of the polypeptide chain. The arrangement of polypeptide is made in such a manner so that POLAR residues present are exposed on outer surface so that it can dissolve in water as water is also polar . And NONPOLAR residues are kept inside so that it can cannot affect the solubility of protein in water.
