To the nearest minute, how long will it take the turkey to cool to 110° F?

Solutions

Expert Solution

Consider that a turkey is taken out of the oven with an internal temperature of 165°F and allowed to cool in a 75°F room. After 30 minutes the internal temperature of the turkey was145°F.

The internal temperature of the turkey after t minutes is

T(t) = 90e-0.0084t + 75

Put T(t) = 110

So,

90e-0.0084t + 75 = 110

         90e-0.0084t = 35

                             t = 1/0.0084{ln(35/90)}

                               ≈ 112

Hence, after 112 minutes the turkey will cool to 110°F.

Hence, after 112 minutes the turkey will cool to 110°F.
