reuben sandwich is a grilled sandwich that contains Swiss cheese corned beef, sauerkraut and Russian dressing and rye bread. All these contain different dietary contents like carbohydrates(dietary fibre, sugar), fat(saturated fatty acid, monounsaturated and polyunsaturated fatty acids)protein, minerals vitamin A, vitaminB1, B2, B3, B5.B6. vitamin C, vitamin K vitamin E, mineral-like sodium iron, calcium, phosphorus, manganese, magnesium, selenium, zinc etc. Digestion of reuben sandwich include digestion of all these components.
Digestion is the process of breaking down of larger food particle into smaller water-soluble particle so that it can easily absorbed from the small intestine. Digestion begins in the mouth with a process known as ingestion. While chewing the reuben sandwich mixes with salve produced by three salivary glands, (parotid, submandibular and sublingual ) .larger food particles are broken down into smaller particle. Salivary amylase enzymes present in the saliva convert starch into glucose. After that swallowing of the swallowing of sandwich into the oesophagus occurs. From the oesophagus, food enters the stomach. In the stomach protease enzyme digests proteins that present in the swiss cheese, sauerkraut, and Russian dressing components of reuben sandwich. From the stomach, food enters into the duodenum of the small intestine where it mixes with enzyme produced by pancreas and liver. The pancreas secretes enzyme protease lipase and carbohydrase run into duodenum.In the small intestine most of the carbohydrate and fats are proteins get digested. Minerals and vitamins present in the sandwich alse digested by enzyme and gastric juice in the stomach and small intestine.
