The two molecules pictured below are triacylglycerols. Identify each one as either a fat or an oil. How do the structures and type of bonding differ in each one and what role does this play in their classification a fat or an oil?
The chemical composition of fats and oil are similar. The main difference between the fats and oil is that the fat is solid due to long chain saturated fatty acid are attache with the glycerol. For this reason they have a compact structure and high melting point. Oils have unsaturated fatty acid attached to the glycerol for which they have low melting temperature and remain liquid in normal temperature.
