Answer - For serving the food and beverage to the customers in hotels and restaurants there are number of services to be followed.The service mention here are :

  • table service,
  • assisted service,
  • self service ,
  • single point service,
  • specialized service

table service- Table service is a type of service , in which the guest first enter the dining area of the hotel and take his/her seats.The waiter then offers the menu cards to them asking for the order.The customer or the guest then place thier order to the waiter.The table is thus covered in this type of service.

Advantages -

  • This type of serivce engages the customer for a time till the order has been served and it represent.
  • It teaches the children and new comers the table manners
  • It gives time to relax first with family and friends ,food is served by nice staffs and menu avialability .

Disadvantages

  • It is costly
  • It cannot be option for certain dishes
  • Time consuming
  • Space is required for moving carts

Assisted Service - In this type of service , the guest first the dining area where plates are kept which they collect and go to the buffet corner in the dining area and help themselve to serve food for itself.Their is a choice for the guest to replenish thier own plates themselves or may partially get the service at the table

Advantages -

  • Staff has more time to connect with customer
  • providing assistance and advice with almost the undivided attention
  • Person to person contact or open communication instead of physical barrier

Disadvantages -

  • consume time
  • some time the dining area may be full causing the guest to eat food at their foot
  • Rarely replacemnt or changes in the order made or chosen

Self service -In the self service after the guest enter the dining area they select the food items and they pay for the coiupans for the repective food items.Then they go for the food counters and show the coupans to the staff and avial the desired food for which they had bought the coupan.In this service the guest need to take thir own plates to the repective table aand have to eat .

Advantages of self service

  • customer are taught new skills
  • It encourages open communication
  • Social engagement

Disadvantages

  • Create more crowd for the staff
  • Not proper feedback management to complain
  • less control and opportunities a brand has to exceed expectation and leave a lasting impression

Single point service - The guest order , then pay for the order and served all at a single point of time .There can be or cannot be the dining area or seats .Different methods of single point service are FOOD COURTS ,Kiosks,Take away,Vending .

Advantage -

  • Quick and simple
  • Less spilling
  • less chance of complain

Disadvantages

  • food may get cold from transportation from kitchen to room
  • delayed service due tom peak hour of operation

Specialized serrvice - Various types of meats and vegetable are displayed in side the dining area for btter view and choice ,with the great aesthtics the counter area is tobe decorated , and when the guest come they get impressed at first sigth and are able to select form the shown meals of meats and vegetable.The guest after taking the food takes their setas and is served the food with accompaniments .

Advantages

  • Provide ease and comfort to the guest
  • Good presentation on the table

Disadvantages

  • Time consuming whenn personalize
  • Expensive
